COURSE CONTENT

The Business of Hospitality and Tourism

Explore the relationships in the tourism sector and look at factors influencing operations at both a national and international level.

Conference and Events within a Hotel or Hospitality Environment

This module explores the processes involved in securing conferences, hotel requirements and the behind the scenes organization that ensures the delivery of a professionally delivered event in a hotel.

Key Principles in Human Resources

Learn about people management and look at the process involved in employing staff, staffing levels and on-going training. We also look at some of the issues hotels face to ensure the guests experience is guaranteed.

Marketing and Distribution

Explore the basic principles of marketing such as segmentation and target markets, and apply these to the hotel industry. Also look at how hotels use tourism distribution networks to help sell their product and remain competitive in today's market.

Customer Service

In this module you explore both the theoretical and the practical side of customer service. Look at standards of customer service across different hospitality business models, expectations and the variety of guests needs.

Food and Beverage

This module explores standards and expectations for F&B operations, as well as the role of the supervisor. Look at the role of a hotel bar manager and the relevant legislation. Complete the required written work needed to earn a bar managers license.

Leadership and supervisory skills

Discover the demands and responsibilities of leadership, as well as the different techniques used and understand the impact of different leadership styles.

ENTRY CRITERIA

Domestic Students

All applicants must:

  • have a qualification in travel or tourism Level 4
  • have achieved a high level of attendance in previous courses undertaken

Note: an entry assessment may be required. This is to determine your ability to read and understand textbooks and ability to write an essay.

International Students

All international students must:

  • be a minimum of 18 years of age at the start of all courses.
  • completed Secondary School offshore or New Zealand Year 12 or equivalent work experience
  • have English language proficiency as outlined in the International pages on this website
