INTRODUCTION
If you want to set yourself up for a career in hospitality, hotels or resorts, this Diploma is for you. Along with an understanding of what’s involved with running food and beverage operations and hotels, you’ll gain a broad range of skills including business development, leadership and culture, and sales and marketing, which transfer across a variety of careers. In addition, our industry partnerships could even see you working in the industry before you graduate.
COURSE CONTENT
The Business of Hospitality & Tourism
Explore the relationships in the tourism sector and how hospitality fits into the mix. Look at all the factors that impact on success in the industry, at both a national and international level.
Food and Beverage Operations
Learn how to manage a successful F&B operation from both a management and financial perspective, looking at key areas such as stock control, legislation, alcohol distribution and budget control.
The New Zealand Hotel and Hospitality Industry
Explore management within the hotel and hospitality industry, including a study tour to visit a range of accommodation properties and hospitality venues, learning what is on offer in New Zealand.
Reception and Housekeeping Services within the Hotel Industry
Look at the roles connected to the front office and housekeeping departments in a hotel. Learn to use a reservation system, how to analyse forecasted occupancy levels and the financial impact, and understand the standards for maintaining rooms and communicating with guests and colleagues.
Conferences & Events within the Hotel and Hospitality Industry
Explore the domestic and international conference and incentives industry, looking at how hotels promote themselves, the role of the conference and banqueting manager, and spend time visiting a variety of conference facilities preparing quotes for potential clients.
Marketing and Sales
Look at the factors that influence marketing, reviewing marketing strategies employed by hospitality, and the use of electronic media. Explore the role of the Business Development Manager and then prepare your own sales presentation to promote a hotel.
Leadership and Culture
Look at leadership styles and communication skills, how to manage conflict, effective teamwork and the influence that values and culture have on a workplace. This module is especially useful for those wanting to work in supervisory or management positions.

Or
Creating the Guest Experience
Explore customer service in depth, looking at standards across different hospitality businesses along with the expectations and variety of guests needs. You’ll also examine different methods employed by hotels to create the perfect guest experience. This module includes an optional international study tour which is self-funded, where you will be visiting, experiencing and comparing customer service standards offered in a range of hotel and hospitality operations in Australia.
AND
Produce a Business Plan for a Food and Beverage Operation
Develop a business plan, which includes finding a location, choosing the products, sourcing items, staffing requirements, menus, pricing, budgets and a marketing plan. This module includes Unit 4646 and 16705 which are required to operate as a Bar Manager.
ENTRY CRITERIA
Domestic Students
All applicants must:
- have a qualification in travel or tourism Level 4
- have achieved a high level of attendance in previous courses undertaken
Note: an entry assessment may be required. This is to determine your ability to read and understand textbooks and ability to write an essay.
International Students
All international students must:
- be a minimum of 18 years of age at the start of all courses.
- completed Secondary School offshore or New Zealand Year 12 or equivalent work experience
- have English language proficiency as outlined in the International pages on this website
